2750-2800 rpm cruise = around 140+/- mph IAS @ 6gph for me.
Pattern; Slow down to 100mph on downwind; Pop flaps (all of them) abeam the numbers and get 80mph for base and early final; Looking to be around 60-65 over the numbers and touch down (three point) @ 40-45.
On takeoff I don't look at the speed except to see that it's alive. Then I get the tail off and wait for the thing to fly (doesn't take long). I can get 1400 fpm on climb out but my CHTs will go up crazy fast. I honestly forget what the normal range for CHTs but it's easily found in the Jab PDF available online and I have those numbers plugged into my EFIS. I normally set up a cruise climb and will get 110mph or so at 400-500 FPM which will keep my temps in line.
I'm not going to say I ignore EGTs but, from everything I've read, the numbers they produce shouldn't be of too much concern until you're setting up your cruise/mixture settings.
You're mileage may vary. Transition training is HIGHLY recommended.
