OK, I hear ya. As long as you can tune a VOR and LOC freq and have a display, you should be good to go for an approach, and yes, you'll fly airways but supplement that "NAV" with GPS.
Now, you are going to need a good pitot-static system...;)

I really like what you are doing with your panel! But, I'd go ahead and add the auto pilot, if you have the funds...
