My first Waiex taildragger in 2007 with paint, interior, and a 3300 Jab came in at right about 715. Yours seems about right in the real world with a nose gear, certainly if you have an interior and some equipment. My second Waiex, a B-model turbo was close to 760. It still flew awesome, until the aerovee swallowed a valve adjuster. Oh well!
I haven't seen too many built with paint, interiors, equipment, and comfort features that end up in the 630-650 range. They are out there with polish and minimal comfort features, but not the norm, I think.
Your plane should fly just great with the 3300 at that weight especially considering the recent gross weight increase from Sonex for 100 + HP engines.
