Setting up AeroVee engine mount

Hi everyone, some ideas please on how to set up the engine mount correctly onto the mounting brackets? SNX-P31 has 3 required dimensions, but I'm struggling to find a method of establishing them.

Any ideas welcome!

It's been a while but I seem to remember using plum bobs and chalk marks on the floor for left/right and in/out. Don't remember how I set up/down.

if you think thats fun, try welding one from scratch, dont even remember how I did it, but it worked out...
