How does Crossville work demo flights?

Can anyone tell me how Crossville works the demo flights? I want to do something similar for the upcoming Northeast Sonex Fly-in (September 6, EEN, NH). I'm looking for how signups are done, how flights are assigned, and how pilots are compensated for fuel costs. The more detail the better :-)
