So, in regards to sonex airframes does the Jab3300 burn less then the Turbo Aerovee? So the turbo is just for hot and high situations? I do think a Sonerai is going to be a bit small for what I need. One consideration is that I'd be operating inside that Mode C veil, so I need ADS-B/Electric/Radio and all that added weight.

Having flown both the turbo and 3300 on the same airframe, I can say yes. Even with a Bing carburetor on the 3300 the fuel burn is lower than the turbo.

Hi Chris,
I think I was a little over Propped I was swinging a Prince Ptip 54x50. I also cruised about 2800 RPM at full Throttle which was about 3100 I was showing about 120-125mph. I sold my engine and am putting on a corvair and the guy I sold it to said is that how you had the carb I said yes and he said some of my problem he believed was I was creating a low pressure and probably not getting enough air into carb. Let me say I loved the Hummel engine I just want a little more performance as I live in the mountains and I am not a slender guy(yes I am fat).

I have built and flown both types. A Sonerai 2LS with Jabiru 2200, flew it for 5 years. Then built an A model Sonex with a 3300 Jabiru, which I've been flying for the past ten years.

At cruise speeds Sonerai was a 120kt aircraft at 2700 rpm, burning 15 LPH. The Sonex with 40 more hp, cruises at 130kts burning 20 LPH. They both fly fairly similar with the sonerai being the more sensitive of the two. Those full span ailerons on the Sonerai are magic.

I believe the Sonex is definitely the better allrounder of the two, with lower stall speeds, better visibility when landing, side by side seating and more baggage area. All the reasons I sold the Sonerai and built a Sonex.
The Sonerai is the better hotrod. With right prop and the same power a Sonerai will be always be faster than a sonex. I would love to have one of each type, both powered by a Jabiru 3300.

Yeah, it sounds a little over-propped to me too. I suspect a few inches finer would be better and get you a few mph faster, but not nearly as much fun as the bigger engine :-)
