If you have the money now, I'd suggest picking up a C150 or an old C172/175 and do your training in it. It'll save you a lot in the long run. When you sell it, you shouldn't lose much. John, I like your throttle set up. That could also still work with a throttle quadrant as well but the throttle lever would have to be below the axis point on the throttle, like on the Van's throttle quadrants. Here's my modified Aerocarb using a reversing arm and push/pull cable. Much smoother than the wire/boden cable setup. The aluminum thing on the intake is my air straightener.

Another thing Bryan, I've flown with the DialATrim and you may want to make sure you can turn the knob without your knuckles hitting anything. You will be giving it a few full turns while adjusting trim and its not just finger tight. It takes a bit of torque.

Make sure your cables clear the bottom of the tank. I mounted my mixture dead center and it was a challenge to snake it around the cutoff valve.

mock it up with some cardboard or scrap plywood and a glue gun.
Sit in he cockpit and make some airplane noises. Adjust as needed.
